I haven't yet held my new Legion (tomorrow hopefully), but to me the biggest difference is the undercut front strap/ trigger guard. Nice sights can be added, worse finishes can be added (hahaha), and a trigger job is easy enough to get. I'm completely underwhelmed by beavertails on SIGs. But the one thing that is not readily done aftermarket is undercutting the trigger guard. I liked the feel of that on my M227 SAS, and I'm excited to have a P226 with that feel. That alone will be worth it to me, especially since I don't really care about worn finishes.

As a side note, I do have a P226 Combat (already installed the SRT), which I shot for the first time over this past weekend. The trigger is probably the worst of all my SIGs, but holy cow, that thing is a tack driver, so who am I to complain. I think it might be my most accurate SIG so far, in spite of the trigger.

IMO I'll say the Legion, I've had no finish issues with my P229 Legion and the SRT trigger is sweet, but ultimately it's what feels good in your hand and what you want to spend. Good luck my friend...
